We adopted a kitten!!!!!!
We adopted a kitten and her name is Zara. She is purrrfect 🙂
Although we were both heartbroken over the loss of our sweet little Palmer and agreed we would wait until spring to get a kitten, I had a change of heart. I realized I couldn’t make it through a long, cold winter without a furry friend. After visiting the St. Paul Animal Humane Society 3 days in a row I finally met little Zara and never looked back.
Jesse and I had a few requirements for our new kitten and so far Zara is meeting them all.
• Kitten must be cuddly/a lap cat
• Kitten must be friendly
So far, she is checking both of the boxes. The second you sit down on the couch, she’s usually not too far behind, and snuggle she does.All night long. As close to my face as she possibly can. As a matter of fact, as I’m writing this she’s resting her head on the side of my laptop.
What else has been going on you ask? Well I’ve been house-wifing it up and cooking like crazy! But sadly, have not been photographing anything 🙁 I’ll get there guys, I’ll get there!

Well Plated by Erin’s Slow Cooker Turkey Quinoa Chili with Sweet Potatoes and Black Beans: This one was super easy to throw together at noon on a Saturday and enjoy it as soon as return from your Saturday afternoon adventures. I’m loving anything with quinoa at the moment, because, well, filling!
Ambitious Kitchen’s Skinny Refried Bean & Chicken Enchiladas: These are seriously everything! And so easy to put together! I wasn’t sure about making my own enchilada sauce, but it turned out so great! This will definitely be one of our healthy winter comfort food staples!
Fit Foodie Finds Grain Free Pumpkin Brownies: Oh my chocolate! I’m not sure if I was supposed to use Nativas Naturals cacao powder in these, but I did and holy rich delicious pumpkin chocolate goodness. I could not stop myself from devouring the whole pan!
Fit Foodie Finds Pizza Quinoa Casserole: I threw this one together for dinner last night. On a scale of 1 (easy) to 10 (hard) this one was a 1 to prepare. Jesse & I are big meat eaters so I used a pound of spicy pork sausage from Whole Foods instead of the recommended 1/2 pound of pork sausage. I thought the quinoa/water/pizza sauce base would be a little thicker – next time I make this I will play around with the water to quinoa ratio. I also will NOT use the spicy pork sausage – I was in heart burn city until about 1am. Yick!
Just this morning we had the BEST pancakes everrrrrrr. Ambitious Kitchen’s Healthy Whole Wheat Pumpkin Pancakes. Sunday morning’s have slowly become pancake mornings in our house hold and I’ve done a great deal of experimenting with healthy recipes, Monique’s are by far, the best pancakes we’ve had for Sunday Pancake day. I was reluctant to throw in the dark chocolate chips as we are pretty sugar conscious but I thought we were due for a treat today. These pancakes are so fluffy, soft, oooey-gooey and delicious! Did I say soft? because the texture of these things is amazing, and they even rose a little, alot of times “healthy” pancake recipes don’t rise up like these babies did. My mouth is watering thinking about them right now. Want. More. Now.
Tonight I made Healthy Baked Chicken & Black Bean Baked Tacos from Simply, Taralynn. I’ve made these a few times before and loved them, but it’s been a year or two and I am delighted to say that I am still in love with this recipe! There is nothing better than a just-baked crunch tortilla with cheese, beans and salsa all baked in. I added a bit more salsa and some greek yogurt to the top and nom’d away. I hope Jesse saves me at least one for my lunch tomorrow!
So that is all I have for you right now! I’m about to go downstairs and watch the Packer game…or Game of Thrones. I can’t decide. I’m at the end of Season 3 and am HOOKED! Eeeks I gotta go, Zara is calling!
