I’m about 3 weeks late, I know!
I thought I would kick off 2016’s blog posts with some of my latest obsessions and some 2016 goals.
Adult Coloring Books! I own 2. I never thought that at age 28 I would have the urge to color, but let me just say that coloring is SO relaxing (and FUN!). As a person who is at times very tightly wound with a predisposition of being anxious, coloring does wonders for me. It is serious in that it forces me to slow down, relax my muscles and get my mind off of whatever is bothering me. Since I can never just have one of something I decided to purchase a serious coloring book, and a not so serious and really quite hysterical one. Quick, easy, healthy meals! As usual, life is pretty hectic in our household. Between work, hockey, workouts and other activities it’s hard to keep up and ensure we have something healthy to eat each night. It seems no matter how hard I try to stay ahead, it’s always Tuesday and the fridge is already empty. Here are some of my recent favorites:
We tried out Lee from FitFoodieFinds Honey Sriracha Crock Pot Chicken on Monday night and we were both super impressed! The recipe is SOOO easy and delicous! This will become a staple in our household for sure!
Last week in an effort to try something NEW I threw together Cookin’ Canuk’s Spinach & Chicken Curry Recipe. I was literally blown away! Who knew I could actually cook something at home that tastes like authentic Indian food? Usually recipes involving curry scare me a little (so complex) but this was super easy AND delicious.
Ambitious Kitchen’s Skinny Refried Bean & Chicken Enchilada’s have become a STAPLE in our home. I have seriously made these about 5x in the last 2 months. The flavor is amazing and they are soooo filling! I love to whip up a pan of them on Sundays and eat them throughout the week. Well, I mean until Tuesday!
Since I seem to be on a roll here…I also FINALLY tried out Ambitious Kitchen’s Deep Dish Pizza on Saturday for the Packer/Cardinals game. (Who the F is Larry Fitzgerald?). The dough was relatively easy to throw together and the end result was deep dish perfection! I took a chance and doubled the recipe for the crust, I wouldn’t recommend doing the same unless you like ALOT of crust.
Interval Training. Running at a steady rate on the treadmill gets old really fast, so I’ve been trying my best to work in a few HIIT workouts into my schedule each week. I started this last winter and really noticed a difference in my mile splits in the once I was able to run outside. I generally start with a 3.5mph walk for 3 minutes, then jog at 5.7 for 5 minutes. After that I alternate between walking at at a pace between 3.5-4.0 mph for 1 minute, running for 1 minute at 6.0mph and then gradually increasing my sprints from about 7.0 mph to 8.0 mph. After I’ve had enough sprinting (after about 28 minutes) I cool down by running the last few minutes at 6.0 mph. I do this at least twice a week, it’s a great monotony breaker when most of your workout time is spent on the treadmill. I REALLY decided to mix it up last week and tried this workout from FitFoodieFinds. Trust me when I say this workout kicks ass! My butt was sore for three days. THREE DAYS, people!!!
The Bachelor. I think this one speaks for itself. This round myself and a few girlfriends filled out brackets. So far I’m not too happy with mine! I totally thought Shushanna was going to be around for awhile, but I’m super happy that Lace left for Lace. If you’re not happy with yourself, it’s not looking good to find someone who will be happy with you. I’ll leave you with a photo of my bracket so you can all tell me how wrong I am 😉 Seriously, how am I supposed to know who he is going to fall in love with!?!?
Staying healthy and fit! As some of you know I am a total healthy living enthusiast. I’m always heading to the gym or out for a run, so it should be no surprise to anyone that one of my goals is to continue this trend. I have been tracking my runs in MapMyRun for several years and have come to really appreciate the Challenges that MapMyRun hosts. The most recent challenge I have joined is their YouVs.Year 1000km in 2016 challenge. 1000km = 621.37 miles!!!!! So far I’m about 50km in. If I can average 12 miles per week I’ll be able to complete the challenge. Right now it’s a little tedious as all miles have been logged on the treadmill, but when spring and summer comes and 15-20mi weeks are the norm, I am hoping to I can smash this thing! Read 12 Books. This was a goal of mine last year as well; and I failed. I got to 9. Hopefully this year lends me some more time for reading than last! So far I’ve read #GIRLBOSS and right now I’m working on Fates and Furies. Stay tuned for book reviews soon!
